This Pouilly-Fumé or Blanc-Fumé from Pouilly is exclusively a production of white wine of Appellation d'origine contrôlée produced from the mono-grape variety of Sauvignon Blanc. Its appellation area extends from Mesves-sur-Loire via Pouilly-sur-Loire to Saint-Martinsur-Nohain on 1,320ha spread over 7 municipalities. This cuvée is the result of a fragmentary selection «les Moutonneaux» with a clay-limestone soil.

Fermentation: We produce our Pouilly-Fumé "Les Moutonneaux" thanks to a fermentation maintained at low temperature (14°-16°) in thermo-regulated stainless steel tanks. The ageing is done on fine lees until the bottling optimizing the quality of the wine.

Tasting:This plot has a clay-limestone soil that gives the vines a good regularity of production and quality. At the tasting level this translates into our wines by subtle aromas in the first years and then aging give more floral, fruity and smoky notes with a touch of mineral. This cuvée gives a wine full of freshness, light and with a good balance. This wine is appreciated fresh, served from 10° to 12 ° and has been tasted now and for two to five years.

Pairings & dishes:In suggestion side sea it is to be tasted with crustaceans including oysters, grilled fish or in sauces and sushi, side land it goes with white meats, appetizers dinatoires but also with charcuteries and cheeses
